Freezer Meals


Freezer meals are a fantastic way to save money, time and energy.  I will be making a lot more of these as my life seems to get busier and busier as my little munchkins get older.  I just made a few meals the other day.  My next round will be for more, maybe like 20?  My 2 year old doesn't eat a whole lot, I usually share some of my food with him so our dinners are pretty much made to feed 2-2.5.

I bought a little over 5lbs of chicken for $8.53 and about 3.5lbs of ground beef for $8.18 (total $16.71).

I used 1lb ground beef to make 4 hamburger patties and froze them (2 dinners)
I used 2.5lb ground beef to make 7 mini Low Carb Meatloaves (3 dinners)
I froze 2 chicken breasts and made some Honey Mustard Marinade (1 dinner)
I baked the rest of the chicken, cut into cubs and split between the next 2 recipes
Homemade Chicken Enchiladas (3 dinners)
Honey Lime Chicken & Rice (2 dinners)

I had pretty much everything else on hand for these and we will most likely have fresh veggies to compliment these dinners, but that doesn't add a whole lot of cost.  The meat portion cost on average $1.51 per dinner ($16.71 / 11 dinners).  I would guesstimate the end cost is around $2 per dinner, that's $1 per person.  Now that is fantastic.  And considering I just spent one day prepping and cooking these meals, even better.
