This is my favorite meatloaf recipe. I decided to whip some up and turn them into Freezer Meals. They are great for freezing or just baking right away. :)
Ingredients
- 2 1/2 lbs Ground Beef
- 4oz cheddar cheese
- 1/2 cup low carb ketchup (or regular if you don't care about the carbs)
- 2 eggs
- 2 cloves minced garlic
- 1 TB Worcestershire sauce
- 1 TB chili powder
- Salt & pepper to taste
- Mix all ingredients together
- If baking right away, bake in 375 degree oven for 30-35 minutes for mini pans or 45-60 for regular loaf pan
- If freezing, place meat into loaf pans (I used mini pans) and freeze for 30 minutes
- After 30 minutes, remove slightly frozen loaves from pans and wrap with plastic wrap, then foil and freeze
- When ready to bake, unwrap, place loaf in pan and let thaw, then bake as above
