Low Carb Meatloaf - Gotta try it to believe it!

This is my favorite meatloaf recipe.  I decided to whip some up and turn them into Freezer Meals.  They are great for freezing or just baking right away.  :)

Ingredients
  • 2 1/2 lbs Ground Beef
  • 4oz cheddar cheese
  • 1/2 cup low carb ketchup (or regular if you don't care about the carbs)
  • 2 eggs
  • 2 cloves minced garlic
  • 1 TB  Worcestershire sauce
  • 1 TB chili powder
  • Salt & pepper to taste 

Directions
  • Mix all ingredients together
  • If baking right away, bake in 375 degree oven for 30-35 minutes for mini pans or 45-60 for regular loaf pan
  • If freezing, place meat into loaf pans (I used mini pans) and freeze for 30 minutes
  • After 30 minutes, remove slightly frozen loaves from pans and wrap with plastic wrap, then foil and freeze
  • When ready to bake, unwrap, place loaf in pan and let thaw, then bake as above
