Homemade Chicken Enchiladas


I made up a bunch of Freezer Meals last night, one of them being my favorite Homemade Chicken Enchiladas.

First I made up a batch of Homemade Flour Tortillas, which makes 8 tortillas.  Then made enchilada sauce, chopped up chicken, grated cheese and threw it all together!

Homemade Enchilada Sauce

Ingredients

  • 3 TB chili powder
  • 1 tsp garlic powder
  • 1/2 tsp onion salt
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1 large tomato
  • 1/2 cup Homemade Salsa (Or store bought or 1 more large tomato)
  • 1/2 cup water
Directions
  • Puree in food processor, or if you don't have one, you can simmer until cooked down
I chopped up 2 cooked chicken breasts and grated 1 1/2 cups cheddar cheese.  

Bake in 325 degrees for 25-30 minutes or put in freezer to bake later.
