Gluten-Free Eating

More and more people are trying to eat Gluten-Free.  I already eat a mostly Whole Foods diet so I don't think going Gluten-Free would be too challenging for me, aside from my baking.  I don't believe I have an intolerance (See 10 Signs That You Have a Gluten Intolerance) but I do want to experiment a little bit and try to find more Gluten-Free recipes to share with you.  So, come learn with me about cooking and baking Gluten-Free foods!


What foods have Gluten?

White Flour
Whole Wheat Flour
Durum Wheat
Graham Flour
Triticale
Kamut
Semolina
Spelt
Wheat Germ
Wheat Bran

And what foods are made with wheat?

Pasta
Couscous
Bread
Flour Tortillas
Cookies
Cakes
Muffins
Pastries
Cereal
Crackers
Beer
Oats*
Gravy
Dressings
Sauces

What other foods tend to contain Gluten?

broth in soups and bouillon cubes
breadcrumbs and croutons
fried foods
imitation fish
lunch meats and hot dogs
matzo
most chips and candy
salad dressings
self-basting turkey
soy sauce
rice and pasta mixes

*Most people are advised to avoid oats when they start a gluten-free diet because it has been debated so much in the past. However, research has shown that pure, uncontaminated oats in small amounts are usually tolerated. Eating oats can also help to provide fiber and other important nutrients.

Wow, that covers just about everything doesn't it?  Except for meats, fruits and veggies of course!  If you eat a Clean, Raw or Paleo diet then you have probably already rid yourself of most glutens.  On my mostly Whole Foods diet, I can saw I have significantly cut out a lot of gluten.  But, most likely, all of my baking does contain gluten.  That will probably be the biggest change.  I'm excited to see what kind of Gluten Free recipes I can make!
