Homemade Salsa

I was super excited this week when I saw Albertson's had Roma Tomatoes on sale for $1/lb!  What is my favorite thing to do with tomatoes?  Make Salsa of course!  I may go back and get some more before the sale is over, I'd love to make another batch of Tomato Jam.  Yum.

So, for somewhere are $5 I was able to make 7 cups of homemade Salsa.  I'm sure you can find Salsa at the store for that price or cheaper, but it will never be nearly as good as homemade.


Ingredients:
(This recipe is actually a canning recipe, so I will list the full amounts.  In this picture I made half a batch because I am not canning it)
  • 10 cups chopped tomatoes
  • 5 cups diced green bell peppers
  • 5 cups chopped onions
  • 3-4 garlic cloves
  • 2 cups +/- hot peppers, to taste (I forgot to buy any peppers so I used a jar of sliced jalapenos that I canned last year) 
  • 1 1/4 cup apple cider vinegar
  • 2-4 TB cilantro, minced
  • 3 tsp salt
  • 1 6oz can tomato paste *Note, I did not use tomato paste, but it is in the original recipe so I wanted to add it here

Directions:

  • Mix all ingredients, except for tomato paste, in large pot and simmer until desired consistency.  
  • Add tomato paste
  • Enjoy as is or
  • Ladle into hot jars leaving 1/4" head-space
  • Process 15-20 minutes in a hot water bath
