We absolutely love pickles in our house and I was amazed at how amazing these turned out. You don't even have to buy special pickling cucumbers, regular cucumbers work fantastic!
Ingredients
- 8 cups of cucumbers, sliced
- 1 sweet onion, diced
- 1 1/2 tsp kosher salt
- 3 cups sugar
- 1 1/2 cup white vinegar
- 1 1/2 tsp celery seed
- 1 1/2 tsp mustard seed
- 4 pint jars
I used 2-3 tsp pickling spices because I didn't have the celery and mustard seed.
Directions
- Toss the cucumbers, onion and salt in a large bowl.
- Combine the sugar, vinegar.
- Divide the spices evenly in the 4 jars, then divide evenly and add the cucumbers/onions to each jar.
- Pour the sugar/vinegar mix evenly into each jar, leaving 1/2-1 inch head space.
- Refrigerate a minimum of 8 hours (several days or a week is awesome)
