Garbanzo Bean (Chickpea) Curry





Ingredients

  • 1 TB EVOO
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger root, finely chopped or grated
  • 1/2 tsp cloves
  • 1/2 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp curry
  • 1 tsp garam masala
  • 2 1/2 cups garbanzo beans (chickpeas)
  • chicken, if desired
  • 1/2 cup water (Omit if using canned beans and use liquid from can)
Directions
  • Heat oil in frying pan and add onions until tender
  • Stir in garlic and spices.  Cook for 1 minute.
  • Mix in garbanzo beans and water and cook until heated through (add cooked chicken if using)
