You can't go wrong with these cookies, if you like coconut anyway. They are amazingly sweet and chewy. You can't just have one...
Ingredients
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- dash of salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 2 TB coconut milk (or almond milk)
- 1/2 cup shredded coconut
- 1/2 cup quick oats
Directions
- Preheat oven to 350 degrees
- Combine sugar, egg, coconut oil, vanilla and milk in a bowl
- Add flour, baking soda, baking powder and salt
- Stir until partially combined, then add coconut and oats, finished mixing until well combined
- Drop by tablespoonfuls onto Silpat lined baking sheet
- Bake for 10 minutes, let cool on baking sheet for 2-4 minutes
- Transfer to cooling rack (and dig in!)
