Day 18 of 30 Days of Cookies - Vegan Peanut Butter Cookies




Ingredients

  • 1/2 cup homemade applesauce
  • 3/4 cup natural peanut butter
  • 2 tsp vanilla
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 1/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 3/4 tsp baking soda
  • dash of salt
Directions
  • Mix applesauce and peanut butter, stir until creamy.
  • Add vanilla, maple syrup and sugar, mix well.
  • Add flour, soda and salt, stir until combined.
  • Drop by tablespoonfuls onto greased baking sheet or Silpat.
  • Bake in 350 degree oven for 10-11 minutes

Onion Ring Fried Egg

Tired of the same old boring fried eggs?  Do something a little different!

Heat up some Olive Oil in a pan, sear one side of the onion ring, flip it over and slowly crack an egg inside the onion ring.  Continue cooking until egg is done!

Quinoa Tuna Cakes

Another big hit tonight Quinoa Tuna Cakes.  I had cooked up the last of my Quinoa a couple days ago and threw it in the fridge.  I had planned to make a berry snack out of it, but never got around to it.  I knew I needed to use it.  So how do you make Quinoa into a delicious dinner?  Add Tuna, make a patty and bake! This was AMAZINGLY good.  It's like a crab cake, but better.  And with Tuna.  I cannot tell you how excited I get when I try something new and it turns out delicious.  You all need to try this.


Ingredients:
  • 1 cup cooked Quinoa
  • 1 can Tuna
  • 1/4 cup chopped onion (or to taste)
  • 1 Garlic clove
  • 1 Egg
  • Cilantro (I found more was better than less, maybe a good handful)
  • Salt and Pepper to taste
Topping:
  • Greek Yogurt
  • Lemon Juice
  • Avocado
Directions:
  • Preheat oven to 375
  • Mix Ingredients together, if too runny add small amount of flour.
  • Use a large spoon to scoop mixture and form into cake on baking sheet (greased or silpat)
  • Bake 25-30 minutes
  • Mix Lemon Juice with Yogurt and put a dollop onto cake, then a slice of Avocado
This made 4 cakes, 2 per serving.  Each serving was just over 300 Calories, 22g Protein, 10g Fat and 27g Carbs.

Oh So Amazing Ginger Chicken Burgers with Grilled Eggplant

I was feeling a little uncreative this afternoon.  After coming up with so many different meals yesterday and today, I was drawing a blank for dinner tonight.  Then it came to me.  I was not sure how it was going to turn out.  After all, I have never cooked eggplant before.  I only had one because it came with my CSA share the other day.  I didn't want it to go to waste.



Ingredients:
Chicken Burgers - Mix ingredients and grill

  • 2 Chicken Breasts, ground (buy a meat grinder here.  I've had mine 2 years and LOVE it)
  • Garlic
  • Fresh Ground Ginger Root
  • Green Onion

Eggplant "Buns" - Drizzle with oil, vinegar, sprinkle with salt & pepper and grill
  • Sliced Eggplant
  • Red Wine Vinegar
  • Olive Oil
  • Salt & Pepper
Lime Mayo - Mix ingredients, put on "buns"
  • Mayo 
  • Lime Juice
  • Lime Zest
 OMG this was probably the best dinner I have had.  My husband, who hates eggplant and thought he was going to have to pass on dinner, gave it 6 stars (out of 5).  THAT'S how good it was.  I may make this again, and again, and again.  If you don't like eggplant, do not let that stop you from trying this.  182 Calories, 8g Carbs, 8g Fat, 25g Protein.  So amazing, I cannot tell you enough.  You'll just have to try it yourself.

Baked Coconut Carrot Fries

So I found this wonderful recipe for Baked Coconut Carrot Fries and had to give it a try.  WOW!  They taste like Sweet Potato fries!  So delicious.  I added some extra seasoning, because that's just how I roll.

Ok, I'll be honest...  The first batch I forgot to set the timer and I burnt the fries.  So, the fries in the first picture are not the same as the second picture.  Hey, it happens. :)


Ingredients:
  • Carrots
  • Coconut Oil
  • Salt, Pepper, Chili Powder to taste
Directions:
  • Cut carrots into French Fry size pieces
  • Mix all ingredients
  • Bake at 400*F for 30-45 minutes (check for doneness, bake time varies on how thick the fries are)



And there you go!  Deliciousness!
