Day 19 of 30 Days of Cookies - No Bake Macaroons



Love Macaroons?  Try these amazing, guilt free No Bake Macaroons.  Recipe from MyWholeFoodLife (My favoritest blogger ever).

Ingredients

  • 2 cups shredded unsweetened coconut
  • 10 medjool dates pitted (I used 15 prunes)
  • 1/2 cup almonds 
  • 1 T coconut oil melted
  • 1 tsp ground vanilla bean or extract (I used extract)
  • 1 T flax meal + 3 T warm water
Directions
  • Combine the flax meal and warm water in a bowl. Whisk it and place in the fridge. 
  • In a food processor, pulse the coconut and almonds into a fine powder. 
  • Add the dates, flax mixture, vanilla and coconut oil. 
  • Pulse until the mixture starts to come together. Roll into balls.  
  • You can also roll the balls in some coconut.
  • Enjoy!  (And remember to share :) )

Day 18 of 30 Days of Cookies - Vegan Peanut Butter Cookies




Ingredients

  • 1/2 cup homemade applesauce
  • 3/4 cup natural peanut butter
  • 2 tsp vanilla
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 1/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 3/4 tsp baking soda
  • dash of salt
Directions
  • Mix applesauce and peanut butter, stir until creamy.
  • Add vanilla, maple syrup and sugar, mix well.
  • Add flour, soda and salt, stir until combined.
  • Drop by tablespoonfuls onto greased baking sheet or Silpat.
  • Bake in 350 degree oven for 10-11 minutes

Day 17 of 30 Days of Cookies - Cocoa Fudge Cookies



Possibly the best ever chocolate cookies.

Ingredients

  • 1 cup flour (whole wheat flour is good, too)
  • 1/4 tsp baking soda
  • dash salt
  • 5 TB coconut oil
  • 1/3 cup cocoa powder (or cacoa powder)
  • 2/3 cup sugar
  • 1/3 cup coconut sugar
  • 1/3 cup plain greek yogurt
  • 1 tsp vanilla
Directions
  • Combine melted coconut oil and cocoa powder together, add in sugars and stir.
  • Add yogurt and vanilla, stir.  Add flour, baking soda and salt and stir until combined.
  • Drop by level tablespoonfuls onto Silpat lined baking sheet and bake at 350 degrees for 8-10 minutes.
  • Let cool on baking sheet for about 2 minutes, remove and let finish cooling on wire rack.

Day 16 of 30 Days of Cookies - Healthy Chocolate Oatmeal Drops


These are a great, healthy snack when you are craving something sweet but don't want a ton of sugar.

Ingredients

  • 2 TB coconut oil
  • 1/4 cup homemade applesauce
  • 2 TB maple syrup or coconut sugar
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • dash of salt
  • 1 TB PB2
  • 2 TB cacoa nibs
Directions
  • Preheat oven to 350 degrees
  • Combine coconut oil, applesauce, syrup (or sugar) and vanilla
  • Add flour, baking soda, baking powder, salt, PB2 and nibs
  • Mix until combined
  • Drop by small tablespoonfuls onto Silpat lined baking sheet
  • Bake for 10-12 minutes

Day 15 of 30 Days of Cookies - Chewy Coconut Oatmeal Cookies



You can't go wrong with these cookies, if you like coconut anyway.  They are amazingly sweet and chewy.  You can't just have one...

Ingredients

  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • dash of salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup coconut oil
  • 1 tsp vanilla extract
  • 2 TB coconut milk (or almond milk)
  • 1/2 cup shredded coconut
  • 1/2 cup quick oats
Directions
  • Preheat oven to 350 degrees
  • Combine sugar, egg, coconut oil, vanilla and milk in a bowl
  • Add flour, baking soda, baking powder and salt
  • Stir until partially combined, then add coconut and oats, finished mixing until well combined
  • Drop by tablespoonfuls onto Silpat lined baking sheet
  • Bake for 10 minutes, let cool on baking sheet for 2-4 minutes
  • Transfer to cooling rack (and dig in!)

Day 14 of 30 Days of Cookies - Double Chocolate Dreams


I was really craving some chocolate today...  And these hit the spot perfectly.

Ingredients

  • 2/3 cup plus 1/2 cup oat flour
  • dash of salt
  • 1/2 tsp baking soda
  • 4 TB coconut sugar
  • 4 TB sugar
  • 2 TB cocoa powder
  • 1 tsp vanilla extract
  • 2 TB coconut oil
  • 1/4 cup milk
  • 1/3 cup chocolate chips
Directions
  • Preheat oven to 350 degrees
  • Combine dry ingredients and mix well
  • Add wet ingredients and chocolate chips and fix until a ball forms.
  • Chill dough for 10+ minutes in fridge
  • Place by rounded tablespoonfuls onto Silpat lined baking sheet
  • Bake for 12 minutes, remove and let sit on baking sheet for at least 10 minutes

Day 13 of 30 Days of Cookies - Apple Cinnamon Breakfast Drops



Ingredients

  • 1 cup quick cooking oats
  • 1 3/4 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup coconut palm sugar or brown sugar
  • 1/2 cup almond milk
  • 1/4 cup applesauce
  • 1/8 cup coconut oil
  • 1/2 tsp vanilla
  • 1/2 cup grated apple

Directions

  • Preheat oven to 350
  • Mix together the dry ingredients in a bowl
  • In another bowl, mix the wet ingredients, then add to dry
  • Stir until combined
  • Drop by tablespoonfuls onto lined baking sheet or Silpat
  • Bake for 15-17 minutes, let cool on wire rack

Day 12 of 30 Days of Cookies - Pumpkin Spice Snickerdoodles



Ingredients

  • 1 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 cup sugar
  • 1 tsp pumpkin pie spice
  • 2 TB butter, softened
  • 2 TB Greek  yogurt
  • 1 TB honey or maple syrup (optional)
  • 1 tsp vanilla
  • 1 TB ground flax seed
  • 3 TB water
  • 1/4 cup pumpkin puree
  • 3+ TB sugar (for rolling dough in)
Directions
  • Preheat oven to 375.
  • Combine flour, baking soda and cream of tartar in a bowl.
  • Combine 1 cup of sugar, butter and yogurt in a bowl.  Add pumpkin puree.  Beat with mixer until well blended.  Add honey, vanilla, egg, flax and water and beat well.
  • Add flour mixture to wet mixture,  mixing until just combined.
  • Cover and chill 10 minutes.
  • Roll tablespoonfuls into balls and roll in sugar.
  • Place on baking sheet lined with Silpat and flatten slightly with fork.
  • Bake for about 10 minutes.  Let cool about 2 minutes on sheet and then remove to cooling rack.

Day 11 of 30 Days of Cookies - Healthy Chocolate Chip Oatmeal Cookies





Ingredients

  • 3/4 cup homemade oat flour
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 TB butter
  • 2 TB Greek yogurt
  • 1/4 cup coconut oil
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup chocolate chips
Directions
  • Mix flours, soda and salt in a bowl, set aside
  • Mix butter, yogurt and oil together until smooth
  • Add sugars, egg and vanilla until creamy
  • Add in flour mixture and chocolate chips and mix until combined
  • Drop by tablespoonfuls onto cookie sheet or Silpat
  • Bake in 350 degree oven for 12-15 minutes

Day 10 of 30 Days of Cookies - Mango Coconut White Chocolate Cookies





Ingredients

  • 1/4 cup butter
  • 1/4 cup Greek yogurt
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 TB molasses (or maple syrup)
  • 1 cup mango puree
  • 1/2 tsp vanilla
  • 3 cups flour
  • 1/8 tsp salt
  • 1/4 tsp cloves
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 TB ground flax
  • 1/2 cup coconut flakes
  • 1/2 cup white chocolate chips/chunks
Directions
  • Mix butter, yogurt and sugars in bowl
  • Add egg, soda, molasses, puree and vanilla
  • Combine flour and seasonings in a bowl, add to wet mixture and stir until combined
  • Add coconut and chocolate
  • Drop by spoonful onto greased cookie sheet or silpat and bake for 12-15 minutes

Day 9 of 30 Days of Cookies - World's Healthiest Cookies



Ok, so these may not be The World's Healthiest Cookies, but that's what the original recipe was called so I figured I would stick with it.  These were incredibly tasty, super low calorie and pretty darn healthy.  Oh, and the kids LOVED them.

Ingredients

  • 4 TB coconut flour
  • 4 TB mashed banana (or applesauce)
  • pinch of salt
  • 1 TB maple syrup
  • 1/4 tsp baking powder
  • 3 TB almond milk
  • Chocolate chips - optional
Directions
  • Preheat oven to 350 degrees
  • Mix coconut flour, baking powder and salt.  Add banana (or applesauce).
  • Add milk 1 TB at a time until well combined
  • Drop by tablespoonful onto greased cookie sheet (or silpat)
  • Bake for 10 minutes
  • Cool on cookie sheet for 1-2 minutes

Day 8 of 30 Days of Cookies - Peanut Butter M&M Yogurt Cookies




Ingredients
  • 1/4 cup butter
  • 1/4 cup Greek yogurt (you can sub applesauce or butter, but I strongly recommend trying the yogurt!)
  • 4 TB sugar
  • 4 TB brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 TB PB2 Powdered Peanut Butter (Best stuff ever, but you can use regular PB too)
  • 1/2 cup M&Ms
Directions
  • Mix butter and sugars together, then add Greek yogurt and stir until smooth
  • Add egg and vanilla, stir until well combined
  • Add dry ingredients and mix thoroughly
  • Add M&Ms
  • Drop by spoonfuls onto baking sheet or Silpat
  • Bake in 350 degree oven for 10-12 minutes.  Let cool on baking sheet for 2 minutes then remove and place on wire rack to finish cooling

Day 7 of 30 Days of Cookies - Pumpkin Banana Bread Cookies



Ingredients

  • 2 cups flour
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup applesauce
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup mashed banana
  • 1/2 cup pureed pumpkin
Directions
  • Mix dry ingredients, add wet ingredients and mix until combined
  • Bake in 350 degree oven for about 12 minutes

Day 6 of 30 Days of Cookies - Best Ever Vegan Chocolate Chip Cookies


Ingredients

  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup oil
  • 1/4 cup applesauce
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
Directions
  • Mix together sugar, syrup and oil until smooth and even in consistency
  • Mix in vanilla and applesauce
  • In separate bowl mix dry ingredients, except for chocolate chips
  • Add dry mixture to wet mixture
  • Fold in chocolate chips
  • Drop by spoonfuls onto greased baking sheet (or Silpat) and bake in 350 degree oven for 6-10 minutes (I found 10 minutes to be perfect)

Day 5 of 30 Days of Cookies - Vegan Zucchini Chocolate Chip Cookies


I picked up a few zucchini and decided to try some zucchini chocolate chip cookies.  These are amazingly delicious!  Great way to get some veggies snuck into your kid's diet.

Ingredients

  • 1 cup brown sugar
  • 1 cup grated zucchini
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup chocolate chips (or raisins or nuts)
Directions
  • Preheat oven to 350 degrees
  • Mix the dry ingredients together
  • Mix the wet ingredients and then add to dry ingredients
  • Add chocolate chips (or raisins or nuts) and mix until combined
  • Drop by spoonful onto parchment paper lined baking sheet or silpat
  • Bake for 10-12 minutes
  • Enjoy!

30 Days of Cookies Day 4 - Healthier Dark Chocolate Dream Cookies



Ingredients:

  • 1/2 cup Dark Chocolate Dreams Peanut Butter (I used half Dark Chocolate, half White Chocolate) (go here for a coupon!)
  • 1/2 cup brown sugar
  • 1 Tb flax meal
  • 2 Tb chia seeds (order here)
  • 1 tsp baking soda
  • 3 Tb warm water
  • 1/2 cup white chocolate chips



Direction:
  • Preheat oven to 350*F
  • Combine all ingredients in bowl
  • Spoon by rounded tablespoons onto ungreased cookie sheet
  • Bake for 10-12 minutes
  • Let cool on sheet for a few minutes before removing to cooling rack



Makes about 12 cookies, if you can keep from eating the batter :)

30 Days of Cookies Day 3 - Raisin Bran Cookies


I had some Raisin Bran that's been sitting in the cupboard for awhile.  I picked up a couple boxes really cheap at Target several months ago.  I decided that it would make for some really good cookies...  So I experimented and what I got were some amazing, delicious Healthier Chocolate Chip cookies, that you could technically eat for breakfast because hey, they are part cereal.  


Ingredients
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 2 TB coconut oil
  • 1 egg
  • 2 TB applesauce
  • 1 tsp vanilla
  • 2 cups crushed Raisin Bran Cereal (I took out the Raisins, but you could leave them in)
  • 1/2 cup chocolate chips
Directions
  • Combine flours, soda and salt in a bowl and set aside
  • In a separate bowl, combine sugar, maple syrup, coconut oil, egg, applesauce and vanilla
  • Add dry ingredients, cereal and chocolate chips to wet ingredients and mix until well combined (the dough was really stiff, but I promise it's worth it!)
  • Bake in 350 degree oven for 8-10 minutes
  • Enjoy!

30 Days of Cookies Day 2 - Pumpkin Banana Drops



Ingredients
Directions
  • Preheat oven to 350 degrees
  • Mix dry ingredients and wet ingredients separately
  • Add wet to dry ingredients and mix until combined
  • Drop by spoonfuls onto greased cookie sheet (or Silpat)
  • Bake for 14 minutes or until lightly browned
  • Makes about 12 small cookies

30 Days of Cookies - Day 1 Healhtier No Bake Drop Cookies


No Bake Drop cookies have always been one of my favorites when I need a quick cookie fix.  These cookies are a fantastic way to make your classic No Bake Cookies a little healthier.

Ingredients

  • 1/3 cup honey (or maple syrup)
  • 1 1/2 TB cocoa (or cacao powder)
  • 1/2 cup coconut oil (or butter)
  • 1/3 cup Almond Butter (Peanut butter is an OK substitute)
  • 1 tsp vanilla
  • 2 cup dried, unsweetened coconut
Directions
  • Put honey, cocoa and coconut oil in a saucepan over medium high heat
  • Bring to a boil and boil for 1 minute.  Remove from heat
  • Stir in almond butter and vanilla
  • Stir in coconut
  • Scoop by spoonfuls onto wax paper or parchment paper and put in fridge until hardened and set.  
I found these kept better in the fridge, but we keep our home at a cozy 80 degrees here in TX right now.
