Ingredients
- 1/4 cup butter
- 1/4 cup Greek yogurt
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 tsp baking soda
- 1 TB molasses (or maple syrup)
- 1 cup mango puree
- 1/2 tsp vanilla
- 3 cups flour
- 1/8 tsp salt
- 1/4 tsp cloves
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1 TB ground flax
- 1/2 cup coconut flakes
- 1/2 cup white chocolate chips/chunks
Directions
- Mix butter, yogurt and sugars in bowl
- Add egg, soda, molasses, puree and vanilla
- Combine flour and seasonings in a bowl, add to wet mixture and stir until combined
- Add coconut and chocolate
- Drop by spoonful onto greased cookie sheet or silpat and bake for 12-15 minutes
