Ingredients
- 2/3 cup oil
- 1 cup Peanut Butter & Co Natural Peanut Butter of choice
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup shredded coconut
- 3 cups oats (1/2 quick, 1/2 old fashioned)
- 1 1/4 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
Directions
- Preheat oven to 375 degrees
- Mix together oil and peanut butter
- Add eggs, sugar and vanilla and mix
- Stir in coconut
- In a separate bowl, mix dry ingredients. Stir into peanut butter mixture
- Drop onto greased baking sheet or Silpat. Gently press to flatten and bake for 10-12 minutes.
