My newest favorite blog, My Whole Food Life, had this recipe for muffins. It's near perfection and didn't really need much changing.
Ingredients
- 2 1/2 cups flour (I used 1 cup white, 1 cup wheat, 1/2 oat)
- 1/3 cup organic, pure maple syrup
- 1/4 cup coconut oil
- 1/2 cup homemade applesauce
- 1 can pumpkin (I used a mix of canned pumpkin and homemade sweet potato puree)
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp ginger
- 1/3 cup chocolate chips
Directions
- Preheat oven to 350 degrees
- Mix wet ingredients in a bowl
- Mix dry ingredients in a separate bowl and add to wet ingredients
- Spoon into greased or lined muffin tins.
- Bake for 15-20 minutes (depending on how full you fill the tins) or until toothpick comes out clean
