This delicious, dense snack cake will make you think you are find dining in heaven.
Ingredients
- 3 oz dark chocolate, chopped (I used dark chocolate chips)
- 3/4 cup pumpkin puree
- 1/2 cup water (I used Zico Chocolate Coconut Water)
- 2 tsp apple cider vinegar
- 1/2 cup brown sugar
- 2 tsp vanilla
- 1/4 cup coconut oil
- 1/2 tsp salt
- 1/4 cup cocoa powder
- 1 cup all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- And if you're feeling adventurous, sprinkle a little cayenne pepper. It is delish.
Directions
- Preheat oven to 350 degrees. Grease cake pan or 8 x 8 pan
- Melt dark chocolate
- Mix together pumpkin, water, vinegar, sugar, vanilla, oil and salt.
- In another bowl, mix together cocoa powder, flour, baking soda, baking powder and spices.
- Combine wet and dry mixtures and mix until smooth. Add in melted chocolate.
- Pour into prepared dish and make 35-45 minutes or until toothpick comes out clean.
