Vegan Better For You Pumpkin Muffins


Vegan Better For You Pumpkin Muffins (Adapted from Vegan Pumpkin Muffins)

1 cup canned (organic if possible) pumpkin
2 TB coconut oil
4 TB applesauce
1/2 cup raw sugar (sub white and/or brown if desired)
1/4 cup vanilla almond milk (if using plain almond mlik, add 1 tsp vanilla extract)
1 1/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/2 tsp pumpkin pie spice

Bake in 350 degree oven for 22-24 minutes.
