Curried Sweet Potatoes Cauliflower and Green Beans




Ingredients

  • 1-2 tsp EVOO
  • 1/2 onion
  • 1-2 cloves garlic
  • 1/2 cup red bell pepper
  • 1 TB corn starch
  • 2 1/2 cups water
  • 1 tsp curry
  • 1 tsp cumin
  • 1 tsp garam masala
  • Salt/pepper to taste
  • 2 cups sweet potatoes, peeled and cut into small chunks
  • 2 cups cauliflower, cut into florets
  • 2 cups green beans, cut into pieces
Directions
  • Heat oil in skillet, add onion, garlic and bell pepper.
  • Cook until tender, about 3 minutes
  • Add cornstarch and seasonings
  • Add sweet potatoes and 2 1/2 cups water
  • Bring to a boil, reduce heat, cover and simmer for 10 minutes
  • Add cauliflower and beans, cover and cook until potatoes are tender and beans are crisp, about 10 minutes.
This was adapted from a food.com recipe.  In the picture above, I did not have onions or red bell pepper and it was still delicious.
