Ingredients
- 1-2 tsp EVOO
- 1/2 onion
- 1-2 cloves garlic
- 1/2 cup red bell pepper
- 1 TB corn starch
- 2 1/2 cups water
- 1 tsp curry
- 1 tsp cumin
- 1 tsp garam masala
- Salt/pepper to taste
- 2 cups sweet potatoes, peeled and cut into small chunks
- 2 cups cauliflower, cut into florets
- 2 cups green beans, cut into pieces
Directions
- Heat oil in skillet, add onion, garlic and bell pepper.
- Cook until tender, about 3 minutes
- Add cornstarch and seasonings
- Add sweet potatoes and 2 1/2 cups water
- Bring to a boil, reduce heat, cover and simmer for 10 minutes
- Add cauliflower and beans, cover and cook until potatoes are tender and beans are crisp, about 10 minutes.
This was adapted from a food.com recipe. In the picture above, I did not have onions or red bell pepper and it was still delicious.
