Ingredients:
- 1 1/2 cups Wheat Bran
- 1 cup Buttermilk (I used Almond milk with vinegar to make it "butter"milk)
- 1/3 Vegetable Oil
- 1 Egg
- 1/2 tsp Vanilla
- 1/2 cup Brown Sugar
- 1 cup All Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1-2 TB Flax Meal
- 1/2 cup Raisins
Directions:
- Mix buttermilk and Wheat Bran together, let sit for 10 minutes.
- Mix Oil, Egg, Vanilla and Brown Sugar. Add to What Bran mixture.
- Add Flour, Soda, Powder, Salt, Flax. Mix.
- Fold in Raisins
- Scoop into lined/greased muffin tin. Bake for 18 minutes at 400 degrees.
