Raisin Bran Muffins

I meant to post this the other day.  It's not part of my Whole Foods menu, but my son thought these were great!  (I did too!)  It's a pretty healthy and yummy muffin.  I found the recipe on OneHundredDollarsAMonth.com and the only thing I changed was adding some Flax meal to it, you know, to make it even healthier.  :)

Ingredients:

  • 1 1/2 cups Wheat Bran
  • 1 cup Buttermilk (I used Almond milk with vinegar to make it "butter"milk)
  • 1/3 Vegetable Oil
  • 1 Egg
  • 1/2 tsp Vanilla
  • 1/2 cup Brown Sugar
  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1-2 TB Flax Meal 
  • 1/2 cup Raisins
Directions:
  • Mix buttermilk and Wheat Bran together, let sit for 10 minutes.
  • Mix Oil, Egg, Vanilla and Brown Sugar.  Add to What Bran mixture.
  • Add Flour, Soda, Powder, Salt, Flax.  Mix.  
  • Fold in Raisins
  • Scoop into lined/greased muffin tin.  Bake for 18 minutes at 400 degrees.
