Before tonight, I honestly couldn't tell you when my last complete dinner fail was. Not that it hasn't happened before, I just couldn't tell you when it was. Well, now I have tonight to be my most recent complete dinner fail.
Last week I got a Kabocha Squash with my share and I figured I should do something with it tonight. I've never had one before, so I looked up some recipes. I found this
Roasted Kabocha Squash with Honey Orange Glaze. Sounds good right? So I attempted to make it. It roasted up fine, but the squash itself doesn't have a lot of flavor. And the glaze, really didn't stick to it or soak in at all. So it was pretty, blah. I decided to mash it up (you know, kind of like potatoes) and mix in some of the glaze hoping to give it more flavor. It only helped a little, but mashed squash is nothing like the consistency of mashed potatoes. It was not appetizing.
Now, the chicken... I marinaded in the glaze and then my hubby put on the BBQ'er. It turned out pretty good. Well, the one piece that was fully cooked... I had already cut into one of the pieces before realizing it wasn't cooked through, so now was to just put it back on the grill. Alas.
So, we just cut up some watermelon, made some popcorn and called it good. :) The kids had the chicken that was thoroughly cooked and some rice. Hey, I can't have every dinner be perfect, right?
