Apple Mango Chicken and Salsa

I always ask my husband to rate my dinners on a scale of 1-5.  I've gotten several "6"s and a "10" once.  Tonight's dinner, got a "20".

Chicken Marinade:
  • Juice from 2 Apples
  • 1/3 cup Fresh Orange Juice
  • 1 - 2 tsp Olive Oil
  • Garlic to taste (1-2 Cloves)
  • Fresh Ginger Root
*Tip: Poke fork holes in the chicken breast and let marinade for a couple hours at least :)

Salsa:
  • 1 Mango
  • 1 Apple (Granny Smith is best)
  • 1/3 - 1/2 Red Bell Pepper
  • 1/4 cup Red Onion
  • Fresh Cilantro
  • 1/3 - 1/2 cup Fresh Orange Juice
*Obviously I added a couple Cucumber slices, not just for looks, they added to the salad.  

We grilled the chicken, but you could also bake it.  It was amazingly juicy off the grill.
